Dark chocolate does make a thicker ganache. If you’d like it less thick use a 1:1 ratio instead.

My granache does not dry like Paul’s is he using something else ,

Paul uses 2:1 ratio of dark chocolate and double cream to make the ganache in the tutorials. He uses Belcolade chocolate with 50% cocoa solids. Can you please say how your ganache is giving you problems.
