Gumpaste or Sugarpaste

Hi,

I have to make a ombre ruffle cake. I just want to know whether to use flowerpaste or sugarpaste to make perfect ruffle, something like in the picture. Cost is not an issue.

……. or you could use half and half of both mediums. The disadvantages with gumpaste or flower paste is that it dries very hard and brittle. The disadvantages with sugarpaste straight is you may not be able to roll the ruffles out so thin and it may present some drying problems. Mixing the two would enable you to roll out thin and it will dry and hold it’s shape. Try a little of each to see which you prefer and what works best for you
I’ve only ever done this sort of ruffle on a dummy cake. On a real cake I use tempered chocolate ruffles which are very thin and all edible.

I will try using half and half. Once I did made ruffles with sugarpaste and yeah it was tough rolling them thin, sometimes while using ball tool they ripped too 🙁 .
Hope it works this time.

I’m sure it will work fine because a mix will give a little more strength in the sugarpaste. x
