Home Made or Ready Made?

I am new to cake making and have been using Ready to Roll Icing. Its producing some nice cakes, however I was wondering whether home made sugar paste would be a better option? I am also unsure of whether the Ready to Roll Icing is just ready made sugar paste or a different style of icing altogether? If any can shine a light on this for I would be very grateful.

Hi, most people new to cake decorating begin with ready made icing which can be bought at supermarkets.  As time goes on and more experience is gained, they either experiment with making their own or move on to the better or more professional icings which are available at cake decorating supply shops or specialist suppliers online/mail order. There are so many types of ready to roll icings available now that decorators are spoiled for choice. On the beginners tutorial Paul gives advice on lots of different aspects of cake decorating, one being icing. You may find that as your knowledge grows, you might want to experiment making your own, (there are many recipes on the internet, including marshmallow fondant). Personally I wouldn’t have the patience with making my own when there is such an abundance of very good ready made ones on the market. It might be best if you start of with some of the less expensive brands and progress from there. Icings can get pretty expensive, but then the tastes can also be very different and it is a matter of personal preference. What ever you decide, have fun doing it and enjoy your baking and decorating. Good luck.

Hi, I am also fairly new to cake decorating and have used most of the supermarket own brands. I have also used a professional sugar paste from my local cake supplier,  I don’t know what brand it is as they buy in bulk and then cut off and sell some in smaller quantities but I didn’t really like it that much, it cracked a lot. The one that suits me best is Dr Oetker. I find it very pliable and although sometimes slightly sticky when rolling out it doesn’t crack much and i can smooth away any imperfections and get a really good finish. I have read that what works for you can even depend on the temperature of your hands. I generally have cold hands!

I have found Tesco’s own is good  to work with and dr Oerter ivory has a lovely finish.As they are so cheap it means you can experiment lots!
