Hot and humid country
I live in a very hot and humid country and I’ve had big problems this week with icing is there a type of icing I can get hold of that is good in these conditions I can’t even use ganache or buttercream now it too hot. As I can’t put my fondant cakes in the fridge as of sweating when they come out any tips?

The above fondant has been developed for use in hot and humid countries. I don’t know whether you can source it where you are based.

In the UK we don’t really know what it’s like to suffer extreme heat and humidity. When we have our ‘extreme’
temps I add 1 teaspoon of tylose or gum tragacanth to 500g of fondant to strengthen it for handling.
