How long does sponge last

I have a huge dilemma… normally i bake one day.. decorate the next and deliver on third

Now next week i have my mother in laws funeral down south on thursday but i have 3 cakes for saturday… i wondering when i could make them so that on friday when i get home i can just decorate them.

Hi Claire

It depends on the type of sponge you are making. Most sponge cakes keep well for between five- seven days, wrapped in cling and stored in an airtight cake tin placed in the fridge. Maderia cake lasts a lot longer without the need to refrigerate and I find all in one sponge does better than a victoria cake. Keeping cakes in the fridge can make them dry so it is important to wrap well and also keep the temperature on chill rather than really cold.
Before filling the cakes, brush both sides of the layers with a little simple syrup. This can add a couple of extra days of freshness to the cakes. The syrup can be flavoured to compliment the cake flavour
