How long in advance can I make a sponge wedding cake

My daughter is making a three tier sponge wedding cake for her sister. It will either be covered in ganache and iced or covered in buttercream with chocolate curls. The question is she’s not sure how far in advance to make the sponge to ensure it stays nice and moist so could you advise. Also can you recommend a good recipe.

Sponge cakes have an approximate shelf life of 5 days but it does really depend on what type of sponge it is.
