How to bake a flat sponge cake?

Can you give me some tips on how to make a flat cake or a good sponge recipe please, I tried the wet cloth around the tin methode but it made my cake not rise at all

Hey Banaz

Is it a vanilla or chocolate sponge you’re looking for? Paul has a good chocolate sponge recipe here: http://www.cakeflix.com/online-cake-decorating-courses/free/moist-chocolate-recipe

Also, baking the cake at a lower temperature ( i do mines at 130 degrees in a fan assisted oven) for a longer time can help the cake rise evenly and so leaving you with a more even surfaced sponge.

I use Wilton bake even strips around my tins and also put a bowl of water at the bottom of my oven. I’ve also heard putting a heavy baking sheet over the top of the cake tin helps to bake it flat. Baking lower and slower helps as well.

Thanks for your answers,  I’ve also heard that the cake batter should have a runny consistency,  is that right?

That is correct Banaz, don’t be tempted to open your oven door too soon other wise the cake will sink. Give it an extra 5 or 10 mins extra if necessary. Booootiful cake!
