I think the guy in utube used the wide end of either a large pastry or icing nozzle to hollow out the bell. He hollowed the tube, gooseneck and bow with a retaining dowel and stood the structure upright to prevent the pastillage from closing up. He stuck the bow and bell together once the whole thing had dried That’s the best tutorial which I can see for a 3D sax, all the others appear to be carved cakes or 2D shapes. Sorry can’t help more.
