How to prepare a cake dummy for icing?
I am about to make my Mum n Dad’s Golden Wedding Anniversary 3 tier cake with the bottom 10″ being a dummy round, as I have never done this before I just wondered how to prepare the dummy in order for the sugarpaste to stick?
I also wondered how strong they are and if they would hold a 8″ fruit on top with board and dowels of course?

To prepare the dummy, first I would stick the dummy onto a board with some royal icing or ganache to stop it moving around while you ice it. Then I would brush with edible glue – just thinly coated – if you apply too much, your icing might slip around. Leave to go tacky while you roll out fondant, then ice as usual.
I would be very confident stacking two tiers on top of a dummy – it won’t collapse as a real cake could.

Hope the tutorial helps, good luck with your cakes. Dummy cakes are very strong, the bigger ones can withstand the weight of a stocky man!
