How to stack a cake

I am looking at a 3-tier cake by zoe Clark. She has sat each tier on top of what looks to be stacked cake drums edged in ribbon. This is allowing the ‘lace’ to drape over the sides.. Do I still put dowels in the cake underneath to support the cake drums where the next tier will sit on?

Twinnietwo-two – just realised this is a daft question, it’ll be same technique as normal for stacking. However to get height between each tier (to raise tiers up), would you sit 2/3 cake drums on top of each other?

Depending on the amount of space that you want between tiers, perhaps it would be easier to use a cake dummy? If you start sticking drums together, not only will you have to match them exactly but you will probably get a seam showing when you cover them. I’ve not seen Zoe’s cake that you refer to, so I may be well off target on spacing.
