How to store a model made out of gumpaste
Hi – I know that if you store a model (with cmc added) in a plastic box, it will cause the models to go sticky & sweat thus loosing their shape (discovered last week from experience..). How is the best & hygienic way to store until reqyired?

Store them in a cardboard box with plenty of ventilation away from humidity or direct heat. A room where the temperature is constant is best. Separate the models or flowers with a little tissue paper or bubble wrap to prevent them rubbing against each other.

One more quick question – for the models I’m talking about, is it best to leave them to last minute before placing on a cake, how far in advance would it be safe to place them? (I placed mine on cake and then stupidly popped cake & all into one of those plastic cake boxes with handle… Then one of my wee models went squiggy & sticky)
Depends how big the models are. If they’re fairly large and need royal icing as glue to stick them down, I’d say a couple of days to ensure stability. Small ones can be stuck on a day in advance. The key thing is to dry them very well after making. I make and store models weeks in advance. Large heavy models go on a card of their own and placed on a dowelled cake.
Place a decorated cake in a cardboard box so everything is well ventilated. I never leave the cake in the kitchen because of the humidity from cooking and kettles. I learned the hard way too.
