Isomalt

I was wondering if any one knows if the Karen Davies moulds are suitable to pour hot isomalt in to, if not, what sort of mould do I use, and where do I get it? I’m particularly interested in butterfly shaped ones

Hi aleast,

I’ve used silicone moulds for isomalt but not the Karen Davies ones. Steer clear of plastic chocolate moulds unless they are specifically made to deal with high temperatures, as the isomalt may ruin them.

There are lots of options for butterfly moulds, a quick check of ebay turns up loads of designs. Try to get one that’s fairly shallow, otherwise you won’t be able to mould it to shape (if you want to).
