Italy Flag Cake – please help!

Hi,

I am in serious need of some help please! I have been asked to do a italy flag cake for next weekend but they want the entire square cake to be in the design of the italian flag so not just on the top but down all sides as well. I am seriously struggling to work out how to do this neatly with the lines from each colour matching up. I don’t really want to put the green and red over the white as this would make a double layer of sugarpaste but am struggling to get the lines to neatly join up, especially with it being square to make the corners neat.
I looked at previous questions and looked at “camiseta del atletico” on youtube but still don’t get it!!

First of all do you just want a flat cake? There are loads of other ideas in google images if you wanted someting a little more interesting.

If I was was making this as a flat square cake, covering it with panels would be a much neater deal. Make panels of each colour and butt them together! Take a look at he Jimmi choo shoe cake tutorial for decoring with sugarpaste panels. I always run a little gum trag or tylose in the sugarpaste to firm it up a little so it makes handling better. Take a look also at any of handbag cakes, Paul uses panels there.

I have had a practice using panels and it went much better, the only thing I’ve found is I can’t seem to get the seams “seamless”, i don’t want to use royal icing as I’m worried I won’t be able to match the colours exactly and tried using water but this left a water mark. But still a much better result than before so thank you ever so much for your help, it is greatly appreciated.

Dust the seams with a small amount icing sugar or a little cornflour to dull down the shiny appearance. You could have made royal icing exact colour match by paddling some of the coloured fondant with a tiny weeny amount of water. All you need is a very thin line of royal icing along the seam which is washed away with a thin damp paint brush. It fills in the gap nicely. I’m pleased it looks fine. . Perhaps for future projects, it might come in handy, you could have a little practice with paddling fondant and water to make royal icing and also patching and washing seams with royal icing. x

You’re welcome fi28. Paddle the fondant on your work board with a little water. If it is too stiff add a little more until it reaches the consistency that you want to work with. For filling seams, the icing should be quite runny but should hold it’s shape in a thin line enough to fill the seam. Once you’ve piped it into the seam gently wash it away with a damp brush. This is also great for neatly finishing off in between stacked cake tiers instead of making a piped snail trail. I hope your customer was pleased with the Italian flag. x
