Jane Hornbys chocolate cake

I recently made Jane Hornbys chocolate cake recipe in an 8 inch round (divided between 2 tins) and it was perfect, although when I scaled down the recipe to make it as a 6 inch cake it was too dense and not as nice. I always use the ready reckoner and have no problems usually. Just wondered what 2x284ml of soured cream(in recipe) would be in grams, as if i weigh it, I think it might be more accurate? Also, recipe doesnt say what size eggs to use. wondered if anyone else has baked this recipe before?

Hello Tomandhen123

It’s fine to weigh the sour cream in grams it’s more accurate than using volume measure + it’s so much easier.
It doesn’t matter which size eggs you use as long as they weigh in total the same weight as the flour, butter and dark chocolate. The original recipe uses 10 eggs, this would be large eggs, each one weighing 65g in their shells.
65g x 10 eggs = 650g. I use mix size eggs and just weigh out what I need. Hope this helps.

Hope next bake goes well. Feed back would be great especially on temperature and timing. x
