Hi
I have just made the 10inch sponge cake and wondered if covered with buttercream as the base coat and then fondant how long would it keep. I usually make a Madeira recipe so have an idea on that type but have never tried this as a large cake to obviously give time to decorate etc.

Hi Kathy

It will depend on the type of sponge. If it’s a sponge made using the creaming method with butter sugar and eggs or an oil based sponge, it will have a good density and will last a good five days before beginning to stale a bit. If you soak the layers in a little simple syrup that will help with keeping the cake moist.

Yes. it should be fine. Lots of people on the site have used Mrs Jones’ recipe with huge success. Every one speaks highly of it. Keep the cake in a cool environment from baking to eating.
