How do I store sponge cakes to keep them fresh when they are covered in sugar paste? When I put them in airtight containers the icing starts to sweat and run.

When decorated, I tend to keep mine in a cardboard box in a cool place … but then I tend to leave it till a day or two before delivery so they are nice and fresh.
Thank you so much for your reply..I generally do that but my problem is once the cake is cut and the sponge is exposed. If not all the cake is eaten, how do I keep the left over cake fresh?
hi, cover the exposed cake with some cling film, but not over the fondant. That’s what I do, and never had any problems. Keep covered in a cardboard box, and in a cool place. Not sure what other members do.
