Hi
After ganashing a cake and covering with sugar paste have had air boldgers! Apear not straght away but the day after when it has dried out a bit and realy when its too late to do anything about can you tell me what im doing wrong please some times the paste has craked too?

This may be happening if you are icing the cake from cold. When the cake comes to room temperature it begins to expand pushing the icing outwards. This can cause bubbles and bulges and when dry the icing can crack. Try to let the cake come to room temperature first before covering. I find it helps.
