lactose free sponge wedding cake

hi, i have a recipe that i use for my vanilla sponge wedding cake’s but can i just replace my usual dairy product’s with the lactouse free substitute’s, thank you 🙂 xxx

As far as I can tell yes you can or use margarine/oil. You might like to have a look at this recipe which uses no fats at all http://allrecipes.co.uk/recipe/19452/ultimate-sponge-cake.aspx. I use an oil based sponge which has no butter, and use a milk alternative as my partner is lactose intolerant. For milk, in chocolate cake I use the hazelnut milk, in vanilla sponge I use anything really – Kara’s coconut milk, lactose free single cream, soy milk, anything really! For filling, I have made dairy free buttercream – dairy free spread and icing sugar just made in the same way. I will say though that it doesn’t set firm so I got a few bulges under my fondant. Lactose free cream works well in Ganache too, you could use it with dark chocolate, or you can get dairy free chocolate.

Double check that it is lactose free and not total dairy free you need. My daughter is allergic to milk protein as well as milk sugar(lactose), in her case we can not use lactose free equivalents but have to use dairy free. In my experience PURE marg is better than Vitalite for cakes x Check also they dont have soya intolerance as often linked.

It should be ok Annabel, but I would advice that you make a small trial cake. The recipe can be converted here http://www.cakeflix.com/blog/how-to-work-out-what-size-cake-tin-to-use. By making a trial cake you’ll be sure it works.
