Level cake
Hi
can somebody, anybody. PLEASE tell me how I can get my cakes to come out of the oven level. Before they go in I tap them, gently swish them, leave them to stand before baking, all in the hope they will end up level. Not much good so far.

There can be several reasons why your cakes are not level. First of all what kind of uneveness are your experiencing?
If you are experiencing doming in the middle of your cake try Wilton baking strips like these:

…. or you could make your own, they are very easy to make just follow tutorials in youtube. You can also scoop the batter to the sides of the pan leaving a very small amount in the middle. As the batter heats up, it will gradually flow back to the middle and bake more evenly with the sides. Don’t over tap the pans because you’ll knock all the air out of your batter resulting in a poor rise. Once your batter is made, pop it in the oven as quickly as you can so the leavening can begin to work with the heat of the oven.
If your cakes are lopsided it could be that your cake pans are too close together which will prevent an even flow of heat around pans. The sides which are closest together will not rise as much as the outter sides.
These are a few things to try. Please could you let me know the type of uneveness you are experiencing.
