Hi
I am making a large cake 14 x9 for joint 21st , would I be better icing it as 1 large cake or halving it and icing each piece , I would feel better if I did that but my worry is the join, it is for a boy and girl and have different scenarios gir both how could I make a neat job on the join .

It would be better if you can ice it in one go. However, if you don’t feel comfortable doing that, the cake can be iced using the panelling method. You’d need to ice the top of the cake first and then each side with strips of icing. To get a neat edge at the top, keep the side strip slightly taller than the cake, adhere it, then peel the corner away and trim off the excess as close to the surface of the cake as possible. Do each strip individually top and side. Pipe a line of royal icing along the joins and brush away with a damp brush. This will neaten off the joins. Alternatively, run a damp finger along the joins to meld together then sharpen off all the joins with smoothers. Search in youtube ‘how to ice a rectanular cake’ to see Jane Asher’s football cake and also take a peek at Paul’s Jimmy Choo shoe cake tutorial. Each will give more guidance. Hope this will help. 🙂
