Lighter chocolate cake.

I don,t know for sure but the only way to make it lighter is to add milk chocolate instead of dark and that would only change the colour not the texture.

Hello Nigel

The moist chocolate cake is light compared to other mud cake recipes. It won’t achieve the same fluffiness as a sponge because it is mixed in a completely different way to give it this dense velvety texture. Aerating the mix slightly might give you texture difference but I think it would also increase the crust which the baked cake forms. Paul does say not to over mix the batter,it should resemble that of muffin mix. Sorry can’t help more, other members might have a different twist.
