Lopsided Cakes

i have a problem with my cakes which is driving me crazy!

i spend ages applying gananche so that the sides look even and straight ( i don’t use a set square). however, after applying sugarpaste i find that one side of the cake slopes. i am clueless as to why this is happening, can you offer any suggestions? thank you!

Hi ringo 1108

It’s possible one side of the cake gets a little less filling.
I would suggest filling the layers and pressing down to make sure the filling spreads out evenly.
Let the cake settle for a couple of hours before icing. If it drops in that time you can rectify the slope with more ganache. Might be worth investing in a spirit level.

thanks so much for your advice. the top of the cake stays fairly straight (though i will follow your suggestion to get a spirit level), its one side that slopes down! so i can position the cake so that from the front it looks nice and straight, but when you look round the back it’s not. do you think this is also down to filling? xx

One other idea is put the cake back in the baking pan that way you can see just how level it is!

My guess is its something to do with smoothing the sugarpaste once you have covered the cake. Maybe holding the smoothers at a slight angle or only using one smoother and its pushing one layer of the cake to the opposite side when you are smoothing? Does that make sense?
