Making a fruit cake last 12 months with fondant in freezer

I have to make an extended 6″ tier fruit cake for a 5 tier wedding cake. The bride wants the top tier to last 12 months in a freezer.. How do I do this?

Rich fruit cakes do not need to be frozen necessarily. Traditionally the top tier was kept for the christening of the first child in the days when the bride became pregnant and gave birth to their first child nine months later. Feed the cake well with brandy or sherry and wrap in greaseproof paper and then foil, then store in a cool place. The cake will mature but not spoil. If you wish to freeze then you could but there is no need to.

There’s an answer here http://www.cakeflix.com/questions/fruit-cake-mould which may also help. I wouldn’t freeze a decorated fruit cake simply because the icing won’t be at it’s best when defrosted. Icing starts to sweat as it comes to room temperature making it shiny and sticky. After one year in storage it will probably need redoing anyway. It’s better to take all the decorations off and start afresh when the cake is required. The bride can be given a choice, some people do freeze fully iced cakes but some disappointment should be expected.
