Hi all, can anyone tell me how long in advance it would be possable to keep an 8″ VICTORIA sponge cake, covered in sugar paste and decorated ? thank you xx

Victoria sponge will have a shelf life of 5 days before beginning to stale. Brushing the layers with a simple syrup drench made by boiling for a minute or two, equal quantities of sugar and water or juice will help keep it moist for a couple of days longer as will adding a teaspoon of glycerine to the batter.
