making flowers ahead

hi can anyone help me please. How far in advance can I make flower paste decorations? I have a wedding cake to do mid march (my first one!) which involves lots of flowers and I was wondering when I can get going on them? thanks x

Hi aleast

You can start the flowers now. I did a cake 18 months ago and have some of the flowers left in a box and they are still perfect. Keep them in a cardboard box lined with greaseproof paper with a lid and out of sunlight – not in the fridge or they will soften and sweat. All the best with your first wedding cake (the first one is very stressful !!)

You can make them all now, so they can dry. Once made store them in cardboard boxes, keep them well ventilated at an even room temperature away from strong smells. If you need to place flowers on top of each other protect with tissue paper. Don’t store in airtight plastic boxes as this will make your flowers sweat and droop.
