Making small quantity of royal icing

I want to make some royal icing but only want to make a small amount, just enough to pipe lettering on 2 cakes and use to stick on a few decorations. Most recipes are to make a larger amount of icing so wondered how I could make less as I won’t use the rest and you can’t keep it for long?

You can make it by paddling a little sugarpaste with a little water together on your work board or counter.
Soften about 40 gms of sugarpaste add a tiny bit of warm water from the end of your pallet knife and paddle back and forth. Keep adding water slowly in drips until you have a piping consistency. Put into your piping cone and write away!. Keep the writing end covered up when not in use other wise it will clump and give you problems.

You can make up as much or a little as you want this way and there’s no waste. Great for smaller decorations, for gluing things together, piping little borders and covering cookies in a hurry.

Would this also be ok to use for attaching ribbon onto a cake?

Not in quanitity, it comes through the other side and spots the ribbons. I use lots of the stick stuff which Paul uses and hold the ribbon on with dress makers pins until fully stuck, then remove the pins. I’d love to know how Paul does it in one go!

You can also buy boxes of royal icing sugar at the supermarket, all you need to do is add water. I just put a few spoonfuls in a bowl, add water to the consistency I want and work it with the back of the spoon for a minute!
