Hello all

What type of cake goes best with marzipan?
And would a chocolate ganache work with them? Making a cricket
Tgemed cake for my father in laws birthday.

Light fruit cake,or richfruit cake don,t use ganache it would be a clash of flavours and all you need is fondant icing

Ganache can be used with fruit cake but the shelf life will be significantly shortened. Fruit cake lasts a very long time so if it is going to be stored for a while the ganache will deteriorate before the cake will.
If you’re looking for a traditional cake which uses marzipan have a look at some of the battenberg recipes. Just google ‘battenberg recipe with ganache’, there are lots to choose from and you can adapt the recipe to make any size you want.
