Marzipan & Royal Icing

Hi,

Should I leave a certain amount of drying time between marzipaning & royal icing a fruit cake?

Hi tickle, I do leave mine for 24 hours with sugarpaste although some say there is no need to wait. but I have heard that marzipan should be allowed to dry out first before using royal icing…apparently the oils in marzipan can dis-colour the icing.

I was taught to leave the marzipan to dry for at least three days before applying royal icing. As commented by Gina, yes the marzipan can affect the royal icing colour but leeched oils can also break the icing down. Best to allow marzipan to dry out very well to ensure a good platform for the icing to go on smoothly.
