medium eggs for madeira cake
Does mrs jones weigh her medium eggs as usually its same amount of flour etc., and eggs??
I should think that she does. If you work on a medium egg weighing between 55 - 63 grams you’ll be fine. If the mixture is very stiff, slacken it slightly with a little warm water. 🙂
they usually weigh more than exact measurement but does it matter??
Sometimes they weigh a little more and sometimes a little less. As long as it within a close range it’s fine. The eggs are weighed in shells and will weigh out slightly more than the other ingredients but even out once cracked.
