mexican paste

I see the recipe for Mexican paste does not contain liquid glucose any more , can you tell me why this is no longer added.

I use Marion Frost’s mexican paste recipe which doesnot contain glucose. I can only imagine that using glucose keeps the paste softer and stretchier than one which doesn’t contain it. Mexican paste as made by Marion dries very hard and is exceptionally good for cutting out shapes. Please could you say which brand you are refering to.

I use Marions recipe for Mexican paste, the original one that Marion gave in her books contained liquid glucose, I hope to go to Cake International in November so will ask then, thank you for your reply.

I hadn’t realised that Marion had changed her recipe to with glucose and now back. It would be good to know why she added it it. Perhaps it was just to soften it slightly, may be the glucose just attracted too much moisture and made the recipe less suitable for structures which needed to dry very hard, quickly.
