Mirror glaze cake

How do you store a cake covered in ganache and mirror glaze and how long will it keep? Also, where can I find UHT cream, Will it be in local supermarkets?

The glazed cake has to be stored in the refrigerator to keep it’s shine. It will keep for two or three days before cloudying over. I haven’t seen UHT cream in the supermarket but worth enquiring or look in the UHT milk aisle. You may be able to get it in food whole salers. However it can be bought online where there are plenty of suppliers:

Thank you for your quick reply. The problem is, I was going to make a plain vanilla sponge, which will then be filled and coated in chocolate ganache. Won’t putting the finished cake in the fridge make the sponge go hard?

Once you have ganached the cake all the moisture will be sealed in. If you serve the cake at room temperature it will soften. Mirror glaze is very lovely but originally it was not intended for cakes which require decorating and serving over several days. It is best used on entrements and gateau type pastries which are consumed within a one or two days. However it has become all the rage at present for bigger cakes. Keeping the cake in a box will further protect it from the risk of drying out.
