Modeling chocolate is a paste made from melted chocolate and warm corn syrup or glucose. When made it can be used for making models, flowers and covering cakes. There are other ways of making it depending on the application. The paste sets very quickly so when covering cakes it has a better texture if used in 50/50 quantities with sugar paste. You can also buy ready made modeling chocolate from many online cake decorating stores and Amazon. Glucose is available in the baking aisle of most large supermarkets.
