Hello caroleLahoud

Modeling chocolate is a paste made from melted chocolate and warm corn syrup or glucose. When made it can be used for making models, flowers and covering cakes. There are other ways of making it depending on the application. The paste sets very quickly so when covering cakes it has a better texture if used in 50/50 quantities with sugar paste. You’ll find lots of helpful information here http://www.hungryhappenings.com/p/chocolate-making-tips.html on how to make the paste and the types of chocolate to use. You can also buy ready made modeling chocolate from many online cake decorating stores and Amazon. The shop on this site doesn’t have it but there are several flavours of the chocolate buttons here http://www.cakeflix.com/shop/product-category/decoration-presentation/candy-melts/ If you’re based in the UK you may find it difficult to obtain corn syrup although it is obtainable online. Glucose is available in the baking aisle of most large supermarkets.
