It depends on your own skill level and how quickly you work. For someone like me who works slowly, I would go for RKT because it would give me more time to model. When you say chocolate I assume you mean chocolate modelling paste? or carving from a block of chocolate? Which ever, they both melt and require working with quickly. I do work with chocolate modelling paste for simple figures and small animal models, never anything which requires precise realistic modelling. It can definitely be done depending on the ability of the person using the medium.
Modelling chocolate could be rolled out and used to cover a RKT modelled figure. This way you’d be using both mediums without having to rush. I’m sure other members will share their preferred method. I have just shared with you what I would do. Hope it helps.

, yes I meant modelling chocolate, I’m thinking maybe best to use rkt then cover in the modelling chocolate,,or brushing on melted chocolate over the rkt to give it a smoother finish ready for the fondant. By the way I’m a slow worker

Oh I’m so glad I’m not the only one! Melted chocolate over RKT will not make it smooth enough to cover up all the dings. It won’t be smooth enough for the sugarpaste. I use sugarpaste ( fondant) or marzipan to give a smooth base and then cover in rolled out chocolate paste or sugarpaste. It works so much nicer, it doesn’t have to be thick layer so the taste isn’t compromised.
