modling chocolate information

Hi.
plz send me the modling chocolate information wich company ‘s chocolate is good.I tryel to make with candy melt but it is soo soft .I can’t wrap with this.so plz help me.

Hello ismail

Paul uses Squire’s Kitchen chocolate modelling paste. Squire’s Kitchen is based in the UK. Here is the link for their shop:

If you are not located in the Uk and your climate is hot and humid this will reflect of the consistency of the modelling paste. The paste can be made firmer by reducing the amount of corn syrup/glucose used in the recipe.
Any type of syrup is hygroscopic, which means it absorbs moisture. If your working atmosphere is humid the syrup will make the paste soft. By reducing the syrup you can balance the amount of moisture in the recipe.
It can also help if you work in an air conditioned environment. Please let me know if you need more information or help.
