For chocolate cupcakes you can substitute 40g of the self raising flour for 40g of coco powder and keep the remaining ingredients the same. If the mixture is too stiff add a little milk just to loosen it so that you have a dropping consistency. For lemon flavour add a table spoon of finely grated zest of an unwaxed lemon along with a table spoon of lemon juice, this will make a very lemony flavour, so you can just use half a teaspoon of lemon extract instead of the juice. Delicious white chocolate cupcakes, just make up the recipe as it is and pipe a swirl of whisked white chocolate ganache as the topping.

I made the cupcakes at the weekend and have to say they are delicious. Very light and fluffy. I was also wondering if they could give us recipes for different flavours. Chocolate, lemon, etc.
