Mrs Jones Cupcake Recipe

I made two batches yesterday (ready to decorate tonight) and was very happy with the result….unitil…..I saw them this morning!

All the cake cases have fallen away from the sides of the cakes!

Why?

I never have this problem with my Victoria Sponge cake recipe.

Thank you for the advice – looked up and noticed a relevant answer relating to the type of storage containers!

Two containers I used for storage were plastic tupperware type but the a third batch were stored in a large cake tin which majority are OK!

Also I did remove them quite quickly from the tin onto the rack so that may have contributed to the peeling.

Usually leaving them in the tin a little too long can cause steam moisture to build up in the cases making them peel. The most probable cause will have been the plastic airtight containers which prevented your cakes from being ventilated. In the question ‘bun cases’ there is more advice. I hope you are able to salvage you CCs. x

Hi Wendycupcake,

I made Mrs Jones cupcakes a couple of weeks ago and stored them as I usually do in an Asda cupcake caddy and the cases peeled away from the cakes. I wonder if it has something to do with the cornflour as I’ve never had this problem before. The recipe I use is 250g stork, SR flour, caster sugar and 5 eggs, vanilla extract. I use the same method as Mrs Jones to mix. Works every time. xx

I’ve had this happen to me when I’d bought some cheaper cupcake cases (thinking I’d got a bargain turned out to be a false economy). When I use a better quality case I didn’t have the problem.

I agree with using good cases but I have also found it happens if the mixture is too dry
