Mrs. Jones’ Fruit Cake

Hi, I tried the recipe of fruit Cake by Mrs. Jones’. I have a gas oven without fan. I baked at 130 degrees centigrade for 3 hours and the cakes were undone. Then, I removed the top covering and increased the temp to 150 degrees centrigrade. It took another 45 mins to bake tke cake. Now, teh cake is a bit crumbly and not well bound together. What did I do wrong?

Hi, mine was exactly the same, so I got in touch with mrs jones, who was very helpful, and told me the cake needs quite a few weeks to mature, to cure the crumbly texture. Not sure why it took so long to bake, but mine was the same, although tasted very nice. I’d thought being a lighter fruit cake, that it would be ready for cutting, once baked, but thought it seemed just as rich as my Christmas cake recipe.

Thank you, Sharon. I will keep the cakes for a couple of weeks and keep my fingers crossed. I stay in a hot city, would you suggest them I keep them referigerated or outside would be okay?
