Rich fruit cakes do better for maturing for about three months. This allows for the fruit to gradually break down to produce a very flavoursome moist cake. Traditionally the top tier of a rich fruit wedding cake was stored for the first child’s Christening, so if stored properly it will keep for a very long time.
