Mrs jones sponge

Is mrs jones sponge a good cake for carving and do you think it would work adding liquidised alcohol soaked fruit many thanks

Hi Debibon

Most sponge cakes can be carved, a lot of children’s novelty cakes are made of sponge. I don’t see why it couldn’t be filled with the soaked liquidised fruit providing it wasn’t so runny that it spoiled the structure of the cake. Mrs Jones has used stork margarine which makes a very light spongy cake. In my opinion cakes baked with butter tend to be sturdier and lend themselves more suitable for carving. Hope this helps.
