Ok, I’m getting a bit confused about baking times. I need to bake a 12″ cake, but don’t know for how long. Is there a general rule to follow if you bake bigger or smaller cakes?

Also, I know the chocolate sponge has a shelf life of 5 days, but does anyone have any idea how long the sponge will last?

Sponge cakes are best eaten within three days of baking but they do last for about five days before starting to feel a bit dry. Keep it in an air tight cake tin and it should be fine.
