my modeling chocolate melts

I have been using a recipie for modelling chocolate that i found on the web, but it keeps melting in my hands, any tips on how to stop tis would be greatly appreciated, at the minute my roses just look like little blobs xx

Hi Maggie

It depends on what type of chocolate you’ve used and the ratio of the other ingredients. There is a recipe on this site for three types of modelling chocolate. If you type ‘white modeling chocolate’ in the search box you’ll see them. The white recipe hasn’t worked for me, there may be an ingredient missing but you can try here http://www.hungryhappenings.com/p/chocolate-making-tips.html for more information. If you’ve made quite a bit of modelling chocolate you could mix it half and half with sugarpaste to stabalise it, or slowly knead in some melted dark chocolate to what you have. I find chocolate with 70% coco works best. Hope this helps.
