No Nuts cake

I have to make a 4 tiered wedding cake, the groom is allergic to nuts, should i cover the fruit cake with 2 layers of coverpaste instead of 1 of marzipan and 1 of coverpaste ?

Yes that would be the way to do it. The first layer of icing should be much thinner just enough to give a smooth base for the final icing to go on. I would suggest ganache but you have fruit cakes and icing would be better to retain shelf life of the cakes. Hope this helps.

You could use a thin layer of yellow/cream icing first so that it looks like marzipan. The Dr Oetker website has a recipe for a nut-free marzipan, and I have copied and pasted it from their website. I have not tried it yet, as I love marzipan!
Remember to use Flavouring and not Extract!
How can I make nut free marzipan?
To make your own nut free version of marzipan follow the method below. It uses soya flour to give it the marzipan texture and Almond flavouring for the taste.

Nut Free Marzipan
Ingredients:
4 oz Soya Flour
5 oz Caster Sugar
5 oz Icing Sugar
2 oz Softened Butter
Dr Oetker Almond fFlavouring to taste
4 Dessertspoons of water

Method:
1. Mix all ingredients in a bowl.
2. Beat until smooth.
3. Roll out and use as normal almond marzipan
