Not using a dummy cake
I am making a wedding cake for my goddaughter’s wedding and am not very experienced. I would like to make the chocolate rose cake and was wondering if Rice Krispies could be used so that I can make the bottom layer earlier so that I do not have the stress the day of the wedding. I do not want to use a dummy cake so I am hoping someone has a suggestion for making the bottom layer early.

Hi Kwiksew, firstly you don’t want to be doing anything on the day of the wedding! Even if you are using sponge cakes you can finish the cake a day or two before and it will still be fine. You could use rice krispies or you could make the bottom tier from fruit cake, which can be decorated the week before. The other option is to make the roses in advance (place a cake drum the same size as the cake on top so you can judge the size and placement) but don’t attach them. Gently remove them whilst you swap the drum for the real cake and then replace them and attach with some royal icing. Good luck!
I don,t think anyone is going to eat the rice krispies.you may as well use a dummy.made it with love,s suggestion of fruit cake is better but will cost more.

I have made dummy cakes in the past with rice krispies, because I was in a hurry and don’t live near shops and it makes such a mess. It does not work out cheaper that a dummy. I think making the roses in advance as suggested is your best option and bake a cake for the bottom. I am sure the guests will love eating your cake.

I would go along with doodlecake’s suggestion of fruit cake. You’d have no worries with it at all. I decorate fruit cakes well in advance, takes away the hassle and last minute stress. I hope all goes well, good luck with your prepartions
