Oozing Sugar paste
Hi
I have deforsted a wedding cake (lemon and white chocolate ganache) 10″ round.
I left the cake on the kitchen table.
Over the course of the day liquid started oozing from the sugar paste.
The sugar paste is still wet and sticky. I have put the cake in cardboard cake box to see if that helps. The cake is still sticky.
How do I fix this or do I try and take this off and re cover it?
I’m trying not to panic but the wedding is on Friday!
I need to stack and decorate. Help!!

Your idea worked perfectly. The fan did the trick. The cake is stacked and decorated.

Hi Rachael
Try leaving the cake by a running fan to help it dry out. Keep rotating the cake at intervals so the whole thing gets an even drying. Don’t touch the icing as it will leave finger marks which won’t disperse once the icing dries. Unfortunately I can’t say how well it will dry for you. If it is really soggy, you may find it less stressful to start over again, especially as you are stacking. If it does dry out nicely, the icing will have a shine which can sometimes be dulled by brushing on some icing sugar but so as you know, it doesn’t always work. Good ventilation is key! Hope it works for you. x

The fan is on.
I will leave it on until later this morning . I will then decide if I need to recover or not.
If I do need to recover then I will have to stack tomorrow.
Close to the wire but hay ho.
