Oyster

Hi, I have been asked to do a basic square cake but to have an oyster in the centre open with a pearl inside, not sure how to make the oyster and to keep it open, does anyone have any advice , thanks alistair

Hi Alistair, you can also use gumpaste in an oyster chocolate mould. Stick halves together with gumpaste mashed with a little water and prop open until join dries (overnight should be ok). I made an item from gumpaste in a chocolate mold and found it didn’t stick in mould but loosen after molding to check.

I would use an oyster shell as the mould. Just pop your gum paste into the shell, let it set for a while and remove.
You could line the shell with clingflim for easier removal. Make two for an open oyster shell and make a gumpaste pearl. What do think, any good?

I was going to suggest making it from gumpaste and shaping it but I think MIWL ‘s idea with the shell is great. From looking at pictures you could probably get the colour from mixing either white or brown or cream and brown for a marbled effect which the oyster shell tends to be. Good luck with it!
