Pastillage piece

Hi
I have to make a pastillage piece and have no experience with pastillage but I have decided to make Paul’s ABC cake and I have to make marzipan models which I will try and make the bears with. Just wondering if anybody had any tips on making this as a pastillage piece and making the models out of marzipan. I have never coloured marzipan before so any tips would be brilliant. Thanks

Hello nigel-mellon

There’s some information here which may be helpful http://www.craftcompany.co.uk/help-and-advice/helpful-advice/how-to-use-pastillage.html
If you’re using shop bought marzipan look for the natural colour rather than the bright yellow one. The white marzipan is easier to colour. Gel colours can be used in the same way as when colouring sugarpaste. Use very tiny amounts because it takes colour very quickly and also develops darker. Sometimes it can change the taste slightly. I use small amount of paste colour and finish off with petal dusts. You can make the pieces shiny with gum arabic. See the recipe for gum arabic glaze here http://www.cakeflix.com/blog/marzipan-fruits-by-madeitwithlove
Hope this helps. I’m sure other members will contribute more information.
