Paul and David’s new book ………

is full of fabulous tutorials. What a great way to start planning for the festive cakes, there’s something for everybody. This a a great companion book for the online tutorials and serves well as quick reference for really close up details, the layout is so clear. There are some terrific new tutorials and variations on themes already covered. Just wanted to share my excitement with all of you, hope you guys don’t mind I was bursting to tell someone. I thought the book was NEVER going to arrive!! Can’t wait to get practicing! xx

Mine arrived yesterday and I had a lot of fun going through it!
I’m a bit confused by the ganache quantities, is the ratio high or am I loopy?

The ganache recipe in the book varies from that in the online tutorial. I’ve asked for clarification, so until that comes I would continue using the recipe in the online tutorial http://www.cakeflix.com/online-cake-decorating-courses/chocolate-ganache and if you like, use the quantity chart here http://www.cakeflix.com/blog/how-to-ganache-cakes-without-gnashing-your-teeth No I don’t think you’re loopy, on looking at the book I got confused as well. There are many different recipes for ganache depending on what the application is, not any one recipe is right or wrong. I mostly use the recipe in the tutorial library as I find it is the most effective for the purposes of decorating cakes. I do however use different quantities for milk and white chocolate ganache. I use other recipes for filling according to the consistency I require. Hope this helps jojo. x

Just to update you on the ganache recipe in the book, there is a print error and the recipe to follow is the one online in the tutorial. x

Recovering from an illness and being very bored, i popped down to my local library this morning and to my great delight, there sitting on the shelf amongst all the cookery books was Pauls new Christmas book! I literally snatched it up, booked it out and couldn get home fast enough, so i could sit and lose myself in the beautiful pages! Definately a book to buy in the near future.
