In the tutorial Paul says to save all the scrap cakes and keep them in the fridge prior to making up the cake pop truffles. In normal circumstances, depending on which cake recipe you use, cakes have a shelf life of about five to six days before becoming stale or showing some signs of deterioration. Madeira cake lasts two weeks, chocolate mud cakes can give ten days, again depending on recipe and how they are stored. However because the truffles are mixed in so much alcohol and condensed milk which is high in sugar and can act as preservative, they will be very moist and most likely have a better shelf life than normal cake. I would say you’d get another good five days from decorated truffles if stored in the fridge. Paul also advises not to re freeze the truffles if you have previously frozen the cake. They can be frozen after you’ve made them, take them out leave to thaw and decorate when required. This is only my personal opinion, I think it would be better and safer to take professional advice from the site by emailing [email protected] for precise instructions particularly if you intend making lots of them. x
