Hi Cupcakeladies

There’s no reason why you can’t bake the cake in sandwich tins but of course the time would be reduced. I haven’t done it myself but I think I would probably bake for approx 50 minutes on low. I bake on 135 c in a fan assisted oven. The cake always sinks a little in the middle and makes a crust but that’s pretty normal. If your cake is sinking a lot it may not be baked enough, and may need an extra 10 or 15 minutes, or you may be baking on too low temperature. All oven temperatures vary, you will know the nature of yours. Have a look at ‘Paul’s moist chocolate cake’ under popular questions. There are lots of hints and tips from other members which you may find useful. Would be good to get feed back if you do decide to bake in the 7″ tins. G’d luck with it.
