Paul’s moist chocolate cake
I live in Québec, Canada and we do not have golden caster sugar here. Basically white caster sugar is extrafine sugar (which we can purchase in Québec) However, we do not have Golden caster sugar. What would be a good substitute? Is brown sugar ok or would turbinado sugar be better?

Plain white caster sugar is just fine to use as is turbinado or brown sugar. Turbinado and brown have larger grains and might take a few minutes longer to dissolve but can be used as substitute for ordinary sugar. I use Muscovado because it makes the cake taste fudgy and really moist, probably has to do with the natural cane juices. Substituting turbinado or brown will have the same sweetness a caster sugars.
